tilapia or basa fish dinner
Talipia dinner
- 1 piece Basa or Talapia
- Tomato sauce (vodka sauce is best)
- peppers - yellow and orange
- red onion
- asparagus
Put some oil on the bottom of a foil lined pan. Place the fish, then a generous amount of sauce and layer the vegetables over top. Cook at 375 F for 20 min's approx or until fish is flaky.

Omelette
- asparagus (lightly cooked)
- ricotta cheese
- red onions and red peppers cooked
- sesame and poppy seeds
Mix 2 eggs with a splash of milk and the seeds. Put a bit of oil in the pan and let the eggs cook until they're almost cooked on top. Put your ingredients in and flip one side over. Let it cook until the cheese is a little melty and enjoy!
cauliflower crust pizza
Cauliflower crust pizza
- 1/2 LARGE head cauliflower (2c approx)
- 1 egg
- 1 c mozzarella or cheddar cheese
- 1 tsp oregano
- 1/2 tsp garlic
Shred the cauliflower. Place the cauliflower crumbles in a large bowl and microwave them (dry) for 8 minutes and it will cook itself.
**I've added the cheese and just eaten the cauliflower as is - everything's better when shredded!
Preheat the oven to 450 degrees F. Spray a cookie sheet or pizza pan with nonstick spray. In a medium bowl, mix the cauliflower with the remaining crust ingredients. Pat the "crust" into a 9 to 12-inch round on the prepared pan. Spray the crust lightly with nonstick spray and bake for 15 minutes (or until golden).
Add your own toppings and broil for a few minutes until ready.
white bean dip
White bean dip
- 1 can white kidney beans
- 1/2 c olive oil
- 1/2 c parmesan
- salt/pepper
- 1/4 c water
Fill the blender with water and the kidney beans. Blend and add the rest of the ingredients. Blend until smooth. Serve with carrots or chips. It's better than hummus!

Fake chicken & broccoli casserole
- one package St. Yves fake chicken strips
- 1 can Campbell's cheddar soup
- 1 bunch broccoli
- 1/2 c yogurt
- 1 can mushrooms
- 1 1/2 c cheddar cheese
